It’s a symphony of textures and tastes that begins with finely chopped spinach, diced onions, and potatoes. Orange n’ Pecan Spinach/ Umbhidvo

Course Salad

Ingredients
  

  • 1 bunch spinach
  • 1/2 large onion
  • 2 potatoes
  • 1 whole orange
  • 1 cup water
  • 1 tbsp cocounut/olive oil
  • 2 tbsp crushed pecan nuts or peanut butter

Spices

  • pink Himalayan salt
  • coarse black pepper

Instructions
 

  • Wash and finely chop spinach and set aside. Dice onions and potatoes (into smaller pieces). Cut the orange into half and set aside
  • In a medium-sized pot, add oil and place on a medium-heat stove plate
  • When hot, add onion, potatoes, and some seasoning to your preference and stir that together as it fries
  • Once onions have turned almost clear, add your spinach into the pot and stir until combined then add the crushed pecans and cover with a lid
  • Let that simmer for about 2 minutes, the spinach should let out some of its own water, and steam from covering the pot. Stir the pot again to incorporate the nuts into the spinach, and add 1/2 cup of water, and close again
  • After about 4 minutes, the consistency should look thick and well combined as the spinach and potatoes cook. Infuse the spinach with half of the orange juice from 1/2 of your orange and stir it in  and let that simmer for about 3 more minutes
  • Add the rest of the water to the pot and stir, the spinach should be looking mushy at this stage but still very green
  • Slice the other half of an orange and place it on top of the spinach just before serving
  • Bon Appetit

Notes

  • Substitute the pecans with peanuts, or peanut butter you arrive at the same place
  • Serve this as a side dish or have with any starch of choice
  • Garnish with fresh pecans and orange slices or edible flowers for aesthetic
