Wash and finely chop spinach and set aside. Dice onions and potatoes (into smaller pieces). Cut the orange into half and set aside
In a medium-sized pot, add oil and place on a medium-heat stove plate
When hot, add onion, potatoes, and some seasoning to your preference and stir that together as it fries
Once onions have turned almost clear, add your spinach into the pot and stir until combined then add the crushed pecans and cover with a lid
Let that simmer for about 2 minutes, the spinach should let out some of its own water, and steam from covering the pot. Stir the pot again to incorporate the nuts into the spinach, and add 1/2 cup of water, and close again
After about 4 minutes, the consistency should look thick and well combined as the spinach and potatoes cook. Infuse the spinach with half of the orange juice from 1/2 of your orange and stir it in and let that simmer for about 3 more minutes
Add the rest of the water to the pot and stir, the spinach should be looking mushy at this stage but still very green
Slice the other half of an orange and place it on top of the spinach just before serving

Notes
Substitute the pecans with peanuts, or peanut butter you arrive at the same place
Serve this as a side dish or have with any starch of choice
Garnish with fresh pecans and orange slices or edible flowers for aesthetic
