Honey Mustard Studded Gammon

Ingredients
For the Gammon

Fresh herbs of choice

For the Broth Spices

peach chutney

Instructions
Step 1: Prepare and Boil the Gammon
Place the gammon in a medium-sized pot. Add the onion, carrot, fresh herbs, and all the spices for the broth.
Pour in 2 liters of hot water, ensuring the gammon is about 90% covered.
Bring to a simmer over medium heat and cook for 2–3 hours, ensuring the gammon is tender and infused with flavor.
Step 2: Make the Sauce
In a saucepan, combine the peach chutney, brown sugar, mustard, lemon juice, and water.
Stir over medium heat until the sugar dissolves.
Reduce the heat and let the sauce simmer for 2 minutes. Remove from heat, let it cool, and set aside.
Step 3: Prep the Gammon for Baking
Preheat the oven to 180°C (350°F).
Place the boiled gammon on a foil-lined baking tray. Carefully remove the fat layer on top.
Using a sharp knife, score the surface diagonally in one direction, then in the opposite direction to create a diamond pattern.
Insert whole cloves into the cross-sections where the lines meet.
Step 4: Glaze and Bake
Brush the gammon generously with the prepared sauce, saving some for later.
Bake for 30 minutes, brushing with more sauce halfway through at the 15-minute mark.
Remove from the oven once golden and caramelized.
Step 5: Serve
Slice the gammon into thin, even pieces and serve with the remaining sauce on the side.
