Ingredients

  • 2 kg whole gammon
  • 1 whole onion peeled
  • 1 whole carrot peeled

  • 4 bay leaves

Step 1: Prepare and Boil the Gammon

  • Place the gammon in a medium-sized pot. Add the onion, carrot, fresh herbs, and all the spices for the broth.
  • Pour in 2 liters of hot water, ensuring the gammon is about 90% covered.
  • Bring to a simmer over medium heat and cook for 2–3 hours, ensuring the gammon is tender and infused with flavor.

Step 2: Make the Sauce

  • In a saucepan, combine the peach chutney, brown sugar, mustard, lemon juice, and water.
  • Stir over medium heat until the sugar dissolves.
  • Reduce the heat and let the sauce simmer for 2 minutes. Remove from heat, let it cool, and set aside.

Step 3: Prep the Gammon for Baking

  • Preheat the oven to 180°C (350°F).
  • Place the boiled gammon on a foil-lined baking tray. Carefully remove the fat layer on top.
  • Using a sharp knife, score the surface diagonally in one direction, then in the opposite direction to create a diamond pattern.
  • Insert whole cloves into the cross-sections where the lines meet.

Step 4: Glaze and Bake

  • Brush the gammon generously with the prepared sauce, saving some for later.
